Hoisin sauce has purely vegetarian ingredients (in addition to probably a few additives that guarantee the shelf life): Soya sauce, sesame oil, flour, sugar... consult the web or read the description on the container. description on the container, if the label is to be trusted. is to be trusted.   1. Tear the broccoli florets (or Chinese broccoli, or Cime di Rapa) into bite-sized pieces and cook briefly (1 minute) in boiling water (or (chicken) bouillon) in a wok, then skim, discard the water and dry the wok. Briefly sauté the chopped garlic and ginger in the wok with hot oil, deglaze with a little water (perhaps add a dash of sherry).
  2. Put the lid on, don't cook for too long so that the vegetables still have a bite and retain their lovely green colour, add a little salt if necessary. Add the soya or hoisin sauce and put the broccoli to one side.
  3. Fry the garlic in hot oil in a clean wok and quickly add the soaked shiitake, a little stock, cornflour dissolved in water to thicken the liquid slightly, hoisin sauce and sesame seeds.
  4. Arrange the warm broccoli in a dish and place the mushrooms on top. You can also combine everything in a wok and toss again briefly.
